Michele--it is best to taste it as it goes along, and bottle when you like it! The fermentation time can vary wildly depending on your conditions (especially temperature)

For 1 gallon of tea, how long do you let it go before drinking? We've let it go too long and it was vinegary and this time I wonder if I bottled it a bit early as it was still kinda sweet. When is that perfect point? Btw, I still have that scoby to give away. Any takers?

I found out recently that you can use Lemon Balm instead of tea for kombucha. I tried it and it does seem to work. It has a nice flavor too.

I use flavored teas and haven't had any issues, though some people say you shouldn't add any flavoring till you put in the fridge. 

I have no issues when I do it, you should give it a shot and see how it turns out for you.

yeah, it has to be caffeinated. The scoby feeds off it and by the time you drink it most of the caffeine is gone.

Does anyone know if it matters if the tea is caffeinated or not? And also if it's bad to use a flavored tea like jasmine green or mango black? Thanks!

I got my scoby thanks to Kendra and am ready to go! Think I'll start with green tea...
